For the Love of Barbecue

When someone says they went to, or had a barbecue, the first picture that your mind makes is a group of people having fun, eating food and something throwing off a sweet smelling smoke. I remember as a kid, my pop, out by the olive green Weber Kettle overdoing it with the lighter fluid (with my help) and cooking burgers, steaks, etc. Sitting outside at the picnic table and eating seemed just way too cool. Well we have come a long way with techniques and equipment, (and a bit less lighter fluid) but the core of “Barbecue” remains the same. Gathering up a good group of friends and family, sharing laughs, drinks, recipes, and memories, while creating new ones. I barbecue because I love it, plain and simple! It takes me back to a simpler time when we were all a bit more relaxed about everything and we all seemed to find time to get together. We do much more than show up with some charcoal and throw some meat on a grill.

 

We start preparing for your event days before. We hand select hardwoods and fruitwoods to use for the heat and smoke for your event. Next we put a blend of seasonings and injections to the meats as needed one day before your event to let the seasonings "work their magic". The day of your event, we show up with our custom wood fired smoker. We slow cook the food for your event for up to seven hours on site. While the food is getting some love from the smoker, we set up a tent to cover the buffet, tables, linens, and service equipment for the food. As your guests show up, everything is prepared and ready to go. Our staff will give tours of the pit, talk shop, and provide BBQ basics if asked. When the food comes off, you and your guests are in for a real treat. The blend of hardwoods and fruitwoods, along with the seasoning that we add, have created the flavor profile that we are known for. After service is done, we pack everything away leaving only memories of a great barbecue. People comment to me often "sounds like a lot of work, why do you do it?". My answer is simple, "for the love of barbecue.........".
